Lemon curd


Love, love, love lemon curd.  This is a really easy recipe which you can cook in the microwave. Cook it in short bursts whisking frequently.


4 free range egg yolks

2/3 cup caster sugar

60 g unsalted butter

2 tsp lemon zest

1oo ml lemon juice


Whisk egg yolks and sugar in microwave proof bowl until just combined.  Add butter, juice and zest and whisk again to combine.

Microwave on high for approx 30 seconds at a time, whisking well in between.

Cook until bubbles appear and mixture is slightly thickened.

Allow to cool.

You can use in sponge cakes, cream puffs, or as a spread for toast or scones.
